First project: Can....whoops....um, well. CAKE!

Well, after going to the GFS and Kroger for various supplies for the week + my mad science needs, Alex and I came home and I was going to make the mint drop candies detailed in the cookbook that came with the mixer.

Unfortunately, I added about double the cream cheese because I read 1 package of cream cheese, and not "one very small package of cream cheese." It tasted great, but it wasn't going to set up to be formed.

Of course, then we realized that I'd made an awesome mint cream cheese frosting.

After moving the frosting to a covered bowl for storage, I broke down the mixer, cleaned everything, and within about 5 minutes I had a pan of cake batter going into the oven.

The results should be done in about 10 more minutes, then we'll let it cool and see just what we got. :)

Edit: Ohhh, man. It's good! It's -damn- good.

I think the 'accidental' frosting is going to be kept around as a recipe for some time when I want to make chocolate mint brownies.

The flames are a decal kit that I can order. I'm going to order them, yeah. I just wanted an icon of one with the flames already on it so I grabbed the picture from the kit webpage. :)

Well, apparently when my mom went to pick one up while they were on sale, they had -one- black Mixer left....and about 20 pink ones.

So I'm not complaining one bit about the color. Besides, black goes with everything!

Well, here's what I did, just to make it worse.

Actually, even better, let me give you both the candy and the frosting.

CANDY:

3 oz. cream cheese
1/4 tsp. mint extract
3 drops green food colouring
4 1/2 c. confectioner's sugar

Using a flat beater, blend the cream cheese, extract, and food colouring until you have a uniform green. Then slowly incorporate the sugar, pausing occasionally to scrape down the bowl.

Once finished, cover a piece of wax paper with fine sugar. Ball the mixture into 1 tbsp. balls, press into the sugar, and form depressions with a fork (peanut butter cookie style)

Place completed candies into the fridge in a sealed container to set for 1/2 hour. Serve or freeze.

For the frosting version, increase the cream cheese to a full 8 oz. package of cream cheese.
