Aug. 2nd, 2007 09:00 pmI completely pulled dinner out of my ass tonight, after looking at 4 recipies and not liking any of them.
Quick Chicken Stew
Ingredients
2 tsp. olive oil
8 oz. can chicken gravy
1 chicken boullion cube
1 1/2 c milk
3 cloves garlic, minced
2 chicken breasts, cubed
2 medium onions, chopped
3 carrots, chopped
3 idaho potatoes, chopped (or several small red potatoes could be done whole)
2 bay leves
3 T. brown mustard
1/2 tsp. red pepper flakes
1/2 tsp. paprika
1/4 tsp chili powder
1/2 tsp. Bavarian Seasoning or equivalent
1 12 oz. can red kidney beans (drained)
1 T. water
1 T. Corn starch
Salt & Pepper to taste
In a decent sized pan, heat the olive oil, then add the onions and garlic and brown them over med-High heat. Once they are totally browned, slowly add the gravy, bouillion cube, and milk.
Bring to a very gentle boil, then reduce to medium heat and add the cubed chicken. Stir at medium heat until the chicken has cooked through, then add vegetables, spices, and kidney beans. Reduce to a simmer for 45 minutes, stirring periodically
At 45 minutes, mix your water and corn starch in a small glass or container. Once the corn starch is dissolved, add the roux to the stew and simmer for another 15 minutes.
Goes well with drop buiscuits, though I could see noodles or rice working out just fine, too.
