The impression I got from what of the Italian I could read was that the piece is for sale, but only to certain stores, and all of them inside Italy, and it cannot be shipped outside of Italy. But I'm sure someone domestic can make something similar, or maybe license it, if we got lucky.

The commercial grade Henckels are far cheaper and just as good as the professional grade ones - it's what I have and I adore them, so if you want to upgrade your knives, look around kitchen stores and/or their associated outlets. I have a fuckoff-huge chef's knife that I adore, a great 8-inch utility knife, and three smaller knives. Christmas was kind this year. ;)

I also have a block of Wiltshire Lasers, but they're serrated and not so great for cutting things like raw meat or tender vegetables. The steak knives are nice, though.

How much were your Henckels? I'll keep that in mind.

Our Chicagos are in a nice block with 8 steak knives, 2 paring knives, some nice slicing knives, a good chopping knife, a bread knife, and a lovely carving knife. Pretty good arrangement.

Not entirely sure - they're from Carl's parents. But Carl's mom is pretty thrifty, so I don't imagine that the chef's knife, for example, would have cost more than $20 USD. Two smaller knives (a four inch serrated and a paring knife) were packaged with a little wooden cutting board and the pricetag was still on (oops, she was all upset) and that was $20 USD.

So if you look around, you'll probably find them fairly reasonable without too much trouble. The key is to look for commercial - they have plastic handles as opposed to the wood of the professional (which is probably why they cost less).

I would recommend trying both the plastic and the wood. I have a set of Wüsthof knives that I really like with rounded plastic handles. Of all the knives I tried (including Henkles and Chicago Cutlery), the Wüsthofs felt the most comfortable in my hand. The best advice I can give is buy the knife that feels the most comfortable in your hand. Even if you have more expensive knives in the house, you will reach for the comfortable knifes more often.

My wife doesn't like my 8-inch Wüsthof chef's knife since she finds the handle too big and the knife too heavy. She usually uses the 6-inch utility knife since she finds it more comfortable to work with.

Good point - the Chicagos fit my hand nicely, so that's probably part of why I'm pretty good with them.

I did recently go on a fairly good hunt for the best possible peelers - finally found one I'm very happy with.
